Bike is a 1994 gen2 500r, with 52.9k miles on the clock.

there seem to be two drain hoses exiting directly behind the oil pan. The forward one (seems smaller) is dumping slight amounts of oil, noticeably, a drop occasionally in a parking lot, and anywhere between a drop and multiple drops overnight. Any ideas on what the hose is? I didn't think the oiling system had any vents that could be dumping oil for whatever reason. Thanks!

Thats probably the Air Box Drain. and it more likly a combination of gas and oil vapor from the crancase condensed in the air box. With such a High milage engine a bit of oil vapor blow by is not un acceptable Open your airbox and mop it out a bit.

Would there be any merit to installing a catch tank to grab this junk before it gets to the airbox?

The Air box "IS" the catch tank. most of the vapor is reprocessed into the engine only the condensation drains . it's perfectly normal.
