How important is it to use the Kawachem brand?

I completely refilled my coolant with Prestone 50/50, and it seems to be running fine for the last 400 miles or so. And Im about to change my oil with the Kawasaki brand oil. I also hear conflicting stories on using regular oil/coolant/chemicals in general vs using the Kawasaki brand stuff. Is there any difference? Is it worth it?

there is a huge difference between the Kawachem oil and the off the shelf stuff:

The off the shelf stuff costs less and is engineered better.

it is safe to use whatever you like, so long as it is recommended for your application. there are no fluids in this machine that are proprietary to KHI, and honestly... OEM Branded oil, in general, sux.

IMO, the only differences in fluids between what bears the Kawi name, and off the shelf stuff, is that off the shelf is substantially cheaper. no it wont hurt your motor, unless you forget to put the fluid in, or put it in the wrong place.

so long as the coolant is safe for aluminum motors, you're good. remember our 500's have an aluminum/iron engine.
