I've been contemplating buying some riding pants and was wondering what you all thought was the best option: in terms of comfort and safety and the like.

Before I used to have Joe Rocket Phoenix mesh pants (not the current model, but one from a couple of years ago).

The Phoenix pants have made it ok through my recent low side fall: a few tears and holes here and there, and one of the knee pads almost wore through. The current version of Phoenix pants has much better armor in the knees.

where are you located? Comfort will depend on riding conditions.
I'm in the southwest US, New Mexico to be precise. In general it's hot and dry.

I bought some good quality leather chaps from a shop and bought some auto adhesive velcro. Bought hip and knee protections from a bike shop. Stuck the protection in the chaps. Chaps are just loose enough so a bit of air is going through the legs helping me keeping my cool 8)

I don't know if I could make some money out of it.. :p

Both are extremely pricey. I initially got the Street Jeans because I wanted something that looked relatively normal off the bike. Since that time, I don't care anymore about this issue and the Ultra II's are more versatile I think.

I invested in a custom pair, of naked skin race pants. With extra padding stitched into the knees and hips. On a more hot day, I still wear a pair of leather jeans.
